Ingredients:
4 large zucchini or summer squash
2 tsp garlic powder
⅓ c parmesan cheese, freshly grated
2 tbsp olive oil
Kosher salt and freshly ground black pepper, to taste
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Slice into ¼-inch cuts the squash.
Add the squash slices into a large mixing bowl.
Add garlic powder, olive oil, salt, and pepper. Toss until the squash slices are well coated.
Transfer the squash onto a baking sheet. Make sure to leave a space between each slice.
Sprinkle Parmesan cheese on top.
Place them inside the preheated oven and bake for about 10 minutes.
Broil for another 3 minutes or until they turn golden brown.
