This awesome recipe is so good! I love how simple and delicious this Chicken Lombardy is. With this very basic set of ingredients, you will surely enjoy your lunch or dinner. Enjoy!
Ingredients:
8 oz pkg sliced baby Bella mushrooms
2 tablespoons butter, melted
3 large boneless, skinless chicken breasts
½ c flour
⅓ c butter
½ c chicken broth
¼ c Marsala wine
salt & pepper, to taste
½ tablespoon corn starch + 1 tablespoon water
½ c shredded mozzarella cheese
½ c shredded Parmesan cheese
2-3 green onions, thinly sliced
Directions:
Slice the chicken breast into two.
Wrap each chicken slice with plastic wrap, then use a meat mallet to gently pound it until thin. Repeat the process with the rest of the chicken.
Place a large skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the mushrooms and sauté until soft. Transfer them onto a clean plate.
Add flour onto a clean plate, then coat each chicken piece with it. Shake off any excess.
Add the rest of the butter into the skillet and allow it to melt.
Add the chicken pieces and cook each side until brown. Transfer onto a clean plate.
In the same skillet, add wine and broth. Scrape the bottom of the skillet to get the brown bits.
Add salt and pepper to taste. Allow the mixture to boil.
Turn the heat down to low, then simmer for about 5 minutes or until the texture becomes thick.
Add water and cornstarch mixture, then stir until well blended and thick.
Apply cooking spray in a 9×13-inch baking dish.
Arrange the chicken breasts into the prepared baking dish.
Add the sauteed mushrooms on top of the chicken and spread it evenly.
Pour the sauce over the mushrooms and spread it evenly.
Sprinkle the cheeses and green onions over the sauce.
Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Place it inside the preheated oven and bake for about 20 minutes or until the cheese is melted completely.
Remove from the oven.
Serve hot and enjoy!
