This was by far the best meatloaf I have ever tasted! Try this recipe now and I promise you that it is worth all your time and effort! You are more than welcome to add more ingredients if you wish. Enjoy!
Ingredients:
1 tablespoon olive oil
1 red bell pepper, finely chopped
1 small red onion, finely chopped
2 cloves garlic, minced
2 lbs ground beef
¾ c Italian style breadcrumbs
½ c parmesan cheese
2 Eggs
2 tablespoons tomato paste
1 teaspoon salt
½ teaspoon pepper
2 tablespoons parsley, chopped
¼ lb. deli ham
12-15 large basil leaves
1 ¼ c either shredded mozzarella cheese
marinara sauce
cooked pasta or zucchini noodles, if desired
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the red bell pepper and onion, then sauté until soft.
Add the garlic and sauté until aromatic.
Remove the pan from the heat and allow it to cool.
In a mixing bowl, add the ground beef, Parmesan cheese, eggs, bread crumbs, veggies, parsley, tomato paste, salt, and pepper. Use your clean hands to mix everything.
Put a sheet of parchment paper onto a flat surface.
Add meat mixture in the middle, then create a rectangle shape.
Top it with ham, basil, and cheese. Make sure to leave about an inch border.
Roll the meatloaf from the 8-inch side.
Press the sides to seal.
Place it onto parchment paper.
Put it inside the preheated oven and bake for about an hour.
Remove from the oven and allow it to sit at room temperature for at least 10 minutes.
Slice into even pieces.
Top each serving with pasta and marinara sauce.
