Ingredients:
3 tbsp olive oil, separated
11 ounces sausage, see notes
2 tbsp butter
½ c yellow onion, diced
2 cloves garlic, minced
2 ½ c chicken broth
1 ¼ c white long-grain rice, uncooked
1 small red bell pepper, sliced
1 small green bell pepper, sliced
10.75 ounces cream of chicken soup
½ c sour cream
¾ c milk
1 c cheddar cheese, shredded
1 pinch red pepper flakes, optional
Directions:
Put the rice into a strainer, then bathe it with cold water for about a minute to remove most of the starch.
Shred the cheese and put them into a mixing bowl.
Place a large pot on the stove and turn the heat to medium.
Add 2 tbsp of olive oil and allow it to become hot.
Add the sausage slices and cook each side until brown. Remove from the pot.
Add 2 tbsp of butter into the pot and allow it to melt.
Add the onions and sauté until translucent.
Add the garlic and sauté until aromatic.
Add 1 tbsp of olive oil and chicken broth. Scrape the bottom to get the brown bits.
Add the rice and stir until just mixed. Allow it to boil.
Turn the heat down to low and cover. Simmer for about 10 minutes.
Add the bell peppers and cover the pot again. Cook for 5 more minutes.
Turn the heat off and let it rest for about 10 minutes.
Turn the heat back to low, then add the sour cream, cream of chicken soup, cheese, and milk. Stir until well mixed.
Add the cooked sausage slices and red pepper flakes. Stir until well mixed.
Remove from the heat.
