Ingredients:
1 (16 oz) package linguine pasta
2 tbsp butter
2 tbsp extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes (optional)
1 lb shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ c dry white wine
1 lemon, juiced
2 tbsp butter
2 tbsp extra-virgin olive oil
¼ c finely chopped fresh parsley leaves
1 tsp extra-virgin olive oil, or to taste
Directions:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the linguine and cook for about 8 minutes or until firm to bite. Drain and rinse with cold water to stop the cooking process.
Place a large skillet on the stove and turn the heat to medium.
Add 2 tbsp of olive oil and 2 tbsp of butter, then allow them to become hot.
Add the garlic, shallots, and red pepper flakes. Saute until aromatic and soft.
Meanwhile, season with salt and pepper the shrimp.
Place the shrimp into the skillet and cook for about 2 minutes.
Remove the shrimp from the skillet onto a clean plate.
Add lemon juice and white wine into the skillet, then scrape the bottom to get the brown bits. Allow it to boil.
Add 2 tbsp of butter and 2 tbsp of olive oil. Simmer for a few minutes.
Add the shrimp, linguine, and parsley. Toss until well combined.
Sprinkle salt and pepper for extra taste.
Drizzle 1 tsp of olive oil over each serving.
