Ingredients:
1 pork tenderloin, 1.25pound – 1.5pound
2 tbsp brown sugar
2 tsp coarse ground black pepper
1 ¼ tsp salt
1 tsp paprika
½ tsp onion powder
¼ tsp garlic powder
1 c chicken broth
½ tbsp Worcestershire sauce
1 tsp Liquid Smoke
Directions:
Thaw the pork tenderloin for about 20 minutes at room temperature.
Rinse the pork with water, then use paper towels to pat them dry.
Discard any excess fat.
Slice the tenderloin into equal cuts.
Rub each meat slice with 1 tsp of olive oil.
In a mixing bowl, add all the dry ingredients. Whisk until well mixed.
Coat each meat slice with the dry mixture.
Prepare the Instant Pot and press the “Saute” button.
Add the meat and cook each side until brown.
Press the “Cancel” button, then remove the meat slices from the pot onto a clean plate.
Pour the chicken stock into the pot, then scrape the bottom to get the brown bits.
Add the liquid smoke and Worcestershire sauce. Stir until well blended.
Put the meat slices back into the pot and toss until well coated with the sauce.
Cover the pot and seal.
Cook for about 3 minutes on high pressure.
Remove the meat slices from the pot onto a clean plate. Slice into thin pieces.
For the Gravy:
Press the “Saute” button on the pot.
Dissolved cornstarch in 2 tbsp of the sauce.
Pour the dissolved cornstarch into the pot, then stir until well mixed and thick.
Allow the mixture to boil.
Serve the meat slices and spoon the delicious sauce on top. Enjoy!
