Ingredients:
1 pork tenderloin 1lb (450g)
1 puff pastry sheet
1 large onion
1 clove of garlic
2 or 3 slices of ham, thinly sliced into stripes
3 ½ oz (100g) grated Parmesan
1 Egg
Dijon Mustard
Directions:
Prepare the oven and preheat to 400 degrees F or 200 degrees C.
Place a pan on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the onion and garlic, then saute until translucent and aromatic. Remove from the pan onto a clean plate.
In the same pan, add the meat and cook each side for about 5 minutes or until brown. Remove from the heat and allow it to cool.
Brush with egg wash the top of the puff pastry, then arrange the ham slices over and top with a generous amount of Parmesan cheese.
Place the meat in the middle of the Parmesan cheese.
Spread mustard over the meat and spread the sauteed onions and garlic.
Pour the accumulated meat juice on top of everything.
Wrap the tenderloin and seal the sides.
Brush with egg wash the whole thing.
Place it inside the preheated oven and bake for 45 minutes or until done.
Remove from the oven and allow it to cool at room temperature.
Slice into even cuts.
