Ingredients:
For the Chinese Chicken and Broccoli Seasonings:
1.5 pounds chicken breasts, thin sliced
1 tablespoon coconut aminos
1.5 teaspoon arrowroot powder
½ teaspoon baking soda
⅛ teaspoon black pepper + ¼ teaspoon coarse salt
2 tablespoons olive oil
For the Stir-Fry Sauce:
2 tablespoons coconut aminos
½ teaspoon toasted sesame oil
½ teaspoon aged balsamic vinegar
¼ teaspoon coarse salt
2 tablespoons chicken stock
1 teaspoon arrowroot powder
Other:
4 large garlic cloves, thin sliced
1 tablespoon fresh ginger, finely chopped
4 bulbs scallions, chopped and separate white + green parts
10 ounces broccoli florets, blanched
Cooking fat of your choice, avocado oil or ghee
Directions:
Slice the chicken breasts into ¼-inch thin cuts.
In a mixing bowl, add all the ingredients for the seasonings. Stir until well mixed.
Rub the chicken breasts with mixed seasonings, then place them inside the fridge.
In a mixing bowl, add all the ingredients for the stir-fry sauce. Stir until well combined.
Place the broccoli inside the microwave and heat until soft.
Place a cast-iron skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the chicken breasts and sear each side for about 3 minutes or until they turn golden brown.
Remove the chicken breasts from the skillet onto a clean plate.
In the same skillet, add more oil and allow it to become hot.
Add the garlic, ginger, and scallions. Sauté until aromatic and soft.
Add the chicken breasts and steamed broccoli. Toss everything until well coated.
Add the stir-fry sauce and toss again until well combined.
Sprinkle the scallions on top to garnish.
