Ingredients:
2 ½ pounds beef (e.g., chuck, shanks, or brisket, cut into 2-inch pieces)
2 tablespoons olive oil
4 tablespoons butter
3 c button mushrooms (rinsed, whole)
4 carrots (medium, peeled, and cut into large pieces)
2 leeks (white and light green parts only, sliced ¼″ thick)
1 Vidalia onion (large, peeled, and chopped)
4 shallots (peeled and cut in halves)
2 garlic cloves (minced)
2 garlic heads (optional)
⅓ c all-purpose flour
4 c beef broth (or beef stock, heated)
2 tablespoons red wine vinegar
Kosher salt (to taste)
½ teaspoon black pepper (plus more to taste)
¼ teaspoon nutmeg
Chopped fresh herbs (for garnish)
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees C.
Remove the skins of the garlic heads, then slice them into four.
Place a braising pan on the stove and turn the heat to medium-high.
Add 2 tbsp of butter and olive oil. Allow them to melt become hot.
Add the beef and cook each side until brown. Remove from the pan onto a clean plate.
In the same pan, add the mushrooms, onions, carrots, leeks, and shallots. Sauté for about 3 minutes or until soft.
Add the garlic and sauté until aromatic.
Add the rest of the butter and allow it to melt.
Reduce the heat to low, then add the flour gradually and whisk every addition.
Add the broth and stir until well blended.
Turn the heat up to medium-high, then allow the mixture to boil. Remove from the heat.
Add the nutmeg, salt, and pepper. Stir until well blended.
Add the red wine vinegar and stir until well combined.
Put beef slices over and garlic heads over the sauce.
Cover the pan, then transfer it inside the preheated oven and cook the braised beef for about 4 hours.
Remove from the oven and allow it to cool for a few minutes.
Serve with mashed potatoes. Enjoy!
