Ingredients:
Perfect Instant Pot Rice:
1 c basmati rice (uncooked)
2 c water
1 tbsp olive oil
¼ tsp salt
Stuffed Bell Peppers:
5 medium or 4 large bell peppers
1 pound ground beef (chicken or turkey)
1 – 1 ½ c cooked rice
1 small sweet onion (diced)
1 small tomato (diced)
1 tbsp minced garlic
1 tbsp tomato paste
1 tsp paprika
1 tsp oregano
1 tsp Italian seasoning
½ tsp salt (or more based on preference)
½ tsp ground black pepper
¼ tsp red pepper flakes
1 tbsp Worcestershire sauce
1 tbsp breadcrumbs
2 tbsp fresh parsley (chopped)
1 c water
Optional Garnish:
8 tbsp marinara sauce
8 tbsp shredded mozzarella cheese
Fresh parsley (chopped)
Directions:
Add 1 cup of water, rice, salt, and olive oil into an Instant Pot. Stir until well mixed.
Cover the pot with aluminium foil and poke small holes for the steam to escape.
Add a trivet and add the rest of the water.
Place the pot with the rice over the trivet.
Seal the pot and cook for about 15 minutes in a high setting.
Do a natural release, then open the pot.
Remove the pot with the rice and allow it to rest for about 10 minutes.
Remove the foil cover and use two forks to stir.
Stuff each pepper with the rice. This will take about 1 ½ cups.
For Stuffed Peppers:
Prepare the peppers by cutting off the tops and discarding the seeds.
Place a skillet on the stove and turn the heat to medium.
Add beef and cook until brown.
Add all the ingredients for the stuffed peppers. Stir until well mixed.
Stuff each pepper generously with the mixture.
To Cook:
Place a trivet over the Instant Pot.
Pour in one cup of water and place the peppers over the trivet.
Cover the pot and cook for about 7 minutes on a high setting.
Do natural release, then open it.
Remove the stuffed peppers from the pot.
Serve and enjoy!
