This pudding recipe has always been a part of my family since I was a little kid. I remember my Grandma used to make this all the time! She was so giving enough to share this recipe with me. Now, I get to share it with you as well. How awesome is that? Anyway, I have listed all the ingredients and directions so you just have to follow them step by step and you are good to go! Ingredients:
½ gallon milk
1 c white sugar
1 c uncooked long-grain white rice
3 Eggs, lightly beaten
¼ c milk
¼ tsp salt
2 tsp vanilla extract
ground cinnamon to taste
Directions:
Place a large saucepan on the stove and turn the heat to medium-low.
In a mixing bowl, add the rice, sugar, and ½ gallon of milk. Stir until well mixed.
Pour the mixture into the saucepan. Cover the pan and simmer everything for about an hour. Stir from time to time.
Remove from the heat and allow the mixture to sit for at least 10 minutes at room temperature.
Meanwhile, add eggs, ¼ cup of milk, vanilla, and salt into a small mixing bowl. Whisk until well blended.
Transfer the mixture into a 9×13-inch baking dish and spread it evenly.
Cover the baking dish with plastic wrap. Make sure to fold back the sides to release the steam.
Sprinkle cinnamon over the cooled pudding. Cover it again with foil.
Place it inside the fridge for at least 8 hours or overnight.
Serve cold and enjoy!
