Ingredients:
2 ½ c all-purpose flour
½ c rolled oats
4 tsp pumpkin pie spice
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 ½ c pumpkin puree
1 c brown sugar
1 c white sugar
⅔ c vegetable oil
½ c applesauce
3 Eggs
1 tsp vanilla extract
¼ c of raisins (Optional)
¼ c packed brown sugar
2 tbsp butter, softened
2 tbsp rolled oats
2 tbsp all-purpose flour
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in 18 muffin cups.
In a large mixing bowl, add ½ cup of oats, 2 ½ cups of flour, baking soda, pumpkin pie spice, salt, and baking powder. Whisk until well mixed.
In another large mixing bowl, add 1 cup of brown sugar, pumpkin puree, vegetable oil, white sugar, vanilla extract, eggs, and applesauce. Whisk until well combined.
Transfer the flour mixture into the bowl with the pumpkin mixture and stir until well mixed.
Add the raisins and stir until just mixed.
In another mixing bowl, add butter and ¼ cup of brown sugar. Beat until well blended.
Add 2 tbsp of flour and 2 tbsp of oats. Stir until well mixed.
Transfer the batter into the prepared muffin tin and spread it evenly.
Sprinkle the streusel topping over the batter.
Place it inside the preheated oven and bake for about 35 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow the muffins to cool at room temperature.
