Ingredients:
1 ½ pound small red potatoes
4 slices bacon
¼ cup apple cider vinegar
1 ½ Tablespoons sugar
2 Tablespoons water
3 Tablespoons olive oil
1 teaspoon Dijon mustard
1 medium sweet onion chopped
2 Tablespoons fresh parsley chopped
salt & pepper to taste
Directions:
Step 1: Place a large pot with water on the stove and turn the heat to high, then allow the water to boil.
Step 2: Add the potatoes and cook for about 15 minutes.
Step 3: Remove the potatoes from the pot to a bowl with iced water to cool.
Step 4: Slice the potatoes into small cuts.
Step 5: Arrange the bacon slices onto a baking sheet.
Step 6: Place it inside the oven and bake for about 7 minutes at 375 degrees F. Flip the bacon and cook the other side for 7 minutes more.
Step 7: Remove from the oven and place the bacon slices onto a clean plate lined with paper towels to drain any excess grease. Set aside the bacon fat.
Step 8: Mix Dijon mustard, sugar, water, vinegar, and oil into a mixing bowl.
Step 9: Place a large skillet on the stove and turn the heat to medium.
Step 10: Add about 2 tablespoons of bacon grease and allow it to become hot.
Step 11: Add the onion and sauté until translucent.
Step 12: Add the potatoes and cook for 5 minutes or until they turn brown on the sides.
Step 13: Add the sugar mixture and stir until well mixed.
Step 14: Add the sliced bacon and parsley. Stir until just mixed.
Step 15: Serve hot and enjoy!
