Ingredients:
2 pounds chicken wings (tips removed, separated into wingettes and drumettes)
1 tablespoon BAKING POWDER (whatever you do, do NOT use baking soda)
1 teaspoon kosher salt (plus more to taste)
1 tablespoon butter (melted)
⅓ c hot wing sauce (e.g. Duff’s hot sauce)
Directions:
Step 1: Prepare the oven and preheat to 225 degrees C or 450 degrees F.
Step 2: Use paper towels to pat dry the chicken.
Step 3: In a large mixing bowl, add the wings, then sprinkle baking powder on top. Toss until well coated.
Step 4: Line with foil a large baking sheet.
Step 5: Arrange the chicken wings into the prepared baking sheet. Make sure to leave a bit of space between each chicken wing.
Step 6: Place the baking sheet inside the preheated oven and bake for 40 minutes or until golden brown.
Step 7: Turn off the oven and allow the chicken to sit inside for 5 more minutes.
Step 8: In a mixing bowl, add all the ingredients to the Buffalo sauce. Stir until well blended.
Step 9: Season with salt the chicken wings.
Step 10: Place the wings into the bowl with the Buffalo sauce, then toss until well coated.
Step 11: Serve and enjoy!
