Ingredients:
1 tbsp vegan butter
2 tbsp olive oil, divided
½ medium onion, chopped
2 c sliced mushrooms (16-ounce package)
2 c of cooked lentils, divided
1 c cooked brown rice
½ tsp sea salt
¼ tsp garlic powder
1 tsp dried basils
⅔ c instant oats
½ c breadcrumbs
handful parsley and cilantro
2 tbsp vegan Worcestershire
¼ c Vegan BBQ Sauce
½ tsp liquid smoke
½ – 1 c extra Vegan BBQ Sauce
Directions:
Step 1: Place a large pan on the stove and turn the heat to medium-high.
Step 2: Add 1 tablespoon of olive oil and vegan butter, then allow it to become hot and melt.
Step 3: Add the mushrooms and onions. Sauté until translucent. Remove from the heat.
Step 4: Add ½ of the lentils into your food processor as well as the onions and mushrooms. Pulse until well blended.
Step 5: Transfer the mixture into a large mixing bowl.
Step 6: Add the rest of the lentils, breadcrumbs, cooked rice, parsley, cilantro, Worcestershire sauce, instant oats, basil, liquid smoke, BBQ sauce, cilantro, salt, and pepper into the mixing bowl, then stir until well mixed.
To Bake:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Form small balls out of the lentil mixture.
Step 3: Arrange them onto a lined baking pan.
Step 4: Brush with olive oil on each of the meatballs.
Step 5: Place them inside the preheated oven and bake for about 20 minutes or until done.
Step 6: Remove from the oven and let the lentil balls sit at room temperature to cool.
Step 7: Serve and enjoy!
