Ingredients:
3 cups cooked and shredded chicken (375 g)
1 onion, chopped
1 red bell pepper, chopped
1 jalapeño, chopped
1 cup taco sauce (260 g)
20 taco-size tortillas
3 cups shredded cheddar cheese (300 g)
3 cups shredded Monterey jack cheese (300 g)
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Line with parchment paper a baking sheet.
Step 3: Add the chicken, red bell pepper, jalapeno, taco sauce, and onion in a large mixing bowl. Stir until well mixed.
Step 4: Slice each tortilla into two.
Step 5: Fill each tortilla with 2 tablespoons of Cheddar cheese, chicken mixture, and Monterey Jack cheese.
Step 6: Roll each tortilla into a cone.
Step 7: Put a glass in the middle of the prepared baking sheet.
Step 8: Arrange the tortilla around the glass with the pointy part facing the glass.
Step 9: Sprinkle a generous amount of Monterey Jack cheese and Cheddar cheese on top.
Step 10: Repeat the process until everything is arranged in layers, then remove the glass in the middle.
Step 11: Place the baking sheet inside the preheated oven and bake for 15 to 20 minutes or until the cheese has melted completely.
Step 12: Remove from the oven and transfer everything onto a serving plate.
Step 13: Serve with your favourite dip. Enjoy!
