Ingredients:
1 ½ lb shrimp
3 tbsp butter
4 large garlic cloves minced
½ yellow onion finely minced
3-4 oz roasted red peppers thinly sliced.
¼ tsp paprika
1 ½ c heavy cream
1 c (packed) fresh basil leaves plus more for garnish
1 c fresh grated parmesan
¼ tsp crushed red pepper flakes
½ c white wine (or chicken stock)
salt to taste
black pepper to taste
Directions:
Step 1: Place a large non-stick pan on the stove and turn the heat to medium.
Step 2: Add 2 tablespoons of butter and allow it to melt.
Step 3: Season with salt and pepper the shrimp.
Step 4: Add the seasoned shrimp into the pan and sear each side for about 2 minutes. Remove the shrimp from the pan and place them on a clean plate.
Step 5: Add another tablespoon of butter into the same pan and allow it to melt.
Step 6: Add the garlic, onions, red chilli pepper flakes, paprika, salt, and pepper. Saute everything for 5 minutes or until aromatic and translucent.
Step 7: Add wine and scrape the bottom to get the brown bits, then allow the mixture to simmer.
Step 8: Turn the heat down to medium-low, then add the cream. Stir until well blended. Add more salt and pepper if needed.
Step 9: Add the Parmesan cheese and stir melted completely.
Step 10: Add the basil and cook for about a minute or until wilted completely.
Step 11: Put the shrimp back to the pan and heat for 1 minute.
Step 12: Remove from the heat and sprinkle fresh basil on top.
Step 13: Serve over pasta and enjoy!
