You have got to give this recipe a try! I’m telling you; this will be the best thing you will eat today! The rich smoky flavour of this tenderloin is just too perfect! Feel free to add more ingredients if you want. By the way, be very generous with the amount of cheese that you are going to add. Just do it and thank me later. Enjoy!
Ingredients:
1 1–2-lbs pork tenderloin
4 ounces cream cheese
6 to 8 slices of cooked bacon, chopped
⅓ c shredded cheddar cheese
⅓ c shredded mozzarella cheese
4 oz frozen spinach, thawed and chopped
2 tbsp Cajun seasoning rub
Directions:
Step 1: Prepare the Traeger and preheat to 120 degrees C or 250 degrees F.
Step 2: Slice the tenderloin into two to shape it into a butterfly.
Step 3: Gently pound it to about ¼-inch thick with a meat mallet.
Step 4: In a medium mixing bowl, add the bacon, cheddar cheese, cream cheese, spinach, and mozzarella cheese. Stir until well combined.
Step 5: Transfer the cheese mixture to the middle of the tenderloin and spread it evenly on the bottom.
Step 6: Roll the tenderloin and tie it with twine.
Step 7: Generously rub Cajun seasoning all over the tenderloin.
Step 8: Put the tenderloin onto a baking sheet.
Step 9: Palace it inside the preheated Traeger and cook for 45 minutes or until the temperature reads 140 degrees F.
Step 10: Remove from the Traeger and cover the tenderloin with aluminium foil.
Step 11: Allow the tenderloin to sit for about 10 minutes.
Step 12: Slice into small pieces.
Step 13: Serve and enjoy!
