Ingredients:
For Brownie Cookies:
8 ounces semisweet chocolate- chopped
2 tbsp unsalted butter (room temperature)
2 Eggs
½ c + 2 tablespoons granulated sugar
½ tsp vanilla extract
½ c all-purpose flour
¼ tsp baking powder
For German Chocolate Topping:
1 c evaporated milk
1 c sugar
3 Egg yolks
½ cup butter-softened
1 teaspoon vanilla
1⅓ c sweetened shredded coconut-toasted
11/4 c chopped pecans-toasted
5 ounces melted chocolate- for drizzle
Directions:
To Make the Cookies:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Place 8 ounces of chocolate and butter in a microwavable bowl. Place it inside the microwave and heat until melted. Stir until well blended.
Step 3: In a medium mixing bowl, add eggs, granulated sugar, and vanilla. Stir until well mixed.
Step 4: In a small mixing bowl, add the baking powder and flour. Whisk until well mixed.
Step 5: Transfer the melted chocolate-butter into the egg mixture. Stir until well mixed.
Step 6: Add the flour mixture into the egg mixture and stir until well combined.
Step 7: Spoon 1 12/ tablespoons of the batter and drop each onto baking sheets. Make sure to leave 2-inch space between each cookie.
Step 8: Place them inside the preheated oven and bake for about 10 minutes or until done.
To Make the German Chocolate Topping:
Step 1: Place a large saucepan on the stove and turn the heat to medium.
Step 2: Add sugar, evaporated milk, butter, and egg yolks. Stir and cook for 12 minutes or until the texture becomes thick.
Step 3: Add the vanilla, pecans, and toasted coconuts. Stir until well mixed.
Step 4: Remove from the heat and allow it to cool at room temperature.
Step 5: Put the topping on top and spread it evenly.
Step 6: Drizzle melted chocolate over the topping.
Step 7: Serve and enjoy!
Note:
Place any leftovers in an airtight container and place them inside the fridge.
