Ingredients:
1 c sugar
½ c butter softened (1 stick)
1 Egg
½ c sour cream
1 small box instant vanilla pudding mix 3.4 ounces
½ teaspoon salt
½ teaspoon baking soda
2 c all-purpose flour
2 teaspoons mint extract
3 drops blue colouring + 10-15 drops green colouring
1 ½ c chocolate chips*
Directions:
Step 1: In a medium mixing bowl, add the butter and sugar. Beat until creamy.
Step 2: Add the sour cream, egg, and pudding mix. Beat until well blended.
Step 3: In another mixing bowl, add the baking soda, flour, and salt. Whisk until well mixed.
Step 4: Transfer the flour mixture into the pudding mixture. Whisk until well mixed.
Step 5: Add food colouring and mint extract. Stir until well blended.
Step 6: Add the chocolate chips.
Step 7: Scoop the mixture and drop them onto the baking sheet sprayed with baking spray.
Step 8: Place the baking sheet inside the oven and bake for 10 minutes at 190 degrees C or 375 degrees F.
Step 9: Remove from the oven and let it sit at room temperature to cool for a few minutes.
Step 10: Serve and enjoy!
