Ingredients:
Canola Oil for frying
2 teaspoons sesame oil
1 egg
⅓ c corn starch
3 tablespoons soy sauce
2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
For the Sauce:
1 ½ teaspoons fresh orange zest
2 tbsp fresh orange juice
3 tablespoons soy sauce
3 tablespoons water
⅓ c sugar
⅓ c rice wine vinegar, or dry sherry
⅓ c chicken broth
2 tablespoons corn starch
1 teaspoon canola oil
1 ½ teaspoons minced ginger
3 cloves garlic, finely minced
pinch of red pepper flakes, optional
For the Garnish:
sliced green onions
orange slices
Directions:
Step 1: Preheat a small deep fryer to 375 degrees F, then add 2-inches of canola oil.
Step 2: Add egg, 3 tablespoons of soy sauce, ⅓ cup of cornstarch, and sesame oil in a large mixing bowl. Beat until well mixed and becomes a batter.
Step 3: Add the chicken pieces and allow them to rest in the batter for a few minutes.
Step 4: Add the coated chicken pieces into the deep fryer and cook until golden brown. Make sure to cook them in batches.
Step 5: Place the fried chicken pieces on a clean plate lined with paper towels to drain any excess oil.
To Make the Sauce:
Step 1: In a medium mixing bowl, add the orange juice, orange zest, 3 tablespoons of water, 3 tablespoons of soy sauce, ⅓ cup of chicken broth, ⅓ cup of rice wine vinegar, and 2 tablespoons of cornstarch. Whisk until well combined.
Step 2: Place a large wok on the stove and turn the heat to medium-high.
Step 3: Add 1 teaspoon of canola oil and allow it to become hot.
Step 4: Add the garlic, red pepper flakes, and ginger. Stir and sauté for 30 seconds or until aromatic.
Step 5: Pour the sauce and stir until well mixed. Allow the mixture to become thick.
Step 6: Put the chicken into the wok and toss until well coated with the sauce.
Step 7: Sprinkle green onions on top as well as the orange slices.
Step 8: Serve over rice. Enjoy!
