Ingredients:
3 chicken breasts
salt, to taste
pepper, to taste
1 c all-purpose flour (125 g)
5 Eggs, divided
2 c Italian bread crumbs (230 g)
vegetable oil, for frying
2 c ricotta cheese
24 ounces marinara sauce (680 g)
8 lasagna noodles
1 ½ c shredded mozzarella cheese (150 g)
1 ½ c shredded parmesan cheese (160 g)
fresh basil, to garnish
Directions:
Step 1: Slice the chicken breasts into two and season all sides with salt and pepper.
Step 2: In three different mixing bowls, add the 4 beaten eggs, flour, and bread crumbs.
Step 3: Dip each chicken into the beaten eggs, flour, beaten eggs, and lastly into the bread crumbs. Repeat this process to the rest of the chicken slices.
Step 4: Place a skillet on the stove and turn the heat to medium.
Step 5: Add vegetable oil and allow it to become hot.
Step 6: Add the chicken and fry for 4 minutes on each side or until they turn golden brown.
Step 7: Place the fried chicken onto a clean plate lined with paper towels to drain any excess oil.
Step 8: Add the remaining 1 egg and ricotta cheese in a medium mixing bowl. Stir until well mixed.
Step 9: Prepare the oven and preheat to 180 degrees C or 350 degrees F.
Step 10: On the bottom of the casserole dish, spread ⅓ of the marinara sauce.
Step 11: Place 4 lasagna noodles over the sauce followed by ½ of the ricotta mixture, and 3 fried chicken slices.
Step 12: Top with ½ cup of Parmesan cheese and ½ cup of mozzarella cheese.
Step 13: Repeat steps 11 and 12 until everything is arranged layers.
Step 14: Cover the casserole dish with aluminium foil.
Step 15: Place it inside the preheated oven and bake for 45 to 60 minutes.
Step 16: Remove the cover about 10 minutes before the baking time ends.
Step 17: Remove from the oven and garnish it with fresh basil.
Step 18: Serve and enjoy!
