This recipe is superb! If you are a huge fan of enchiladas, then you have got to give this one a try! Feel free to add more ingredients if you prefer. Enjoy!
Ingredients:
10 8-inch flour tortillas
2 c cooked shredded chicken
2 c Colby & Monterey jack cheese shredded
3 tablespoons butter
3 tablespoons flour
2 c chicken broth
1 c sour cream
1 4ounces can of diced green chillies
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking dish or pan.
Step 3: In a medium mixing bowl, add 1 cup of cheese and chicken. Stir until well combined.
Step 4: Roll each tortilla and arrange them onto the greased pan.
Step 5: Place a saucepan on the stove and turn the heat to medium.
Step 6: Add butter and allow it to melt.
Step 7: Add the flour. Stir and cook for about a minute.
Step 8: Add in the broth and whisk until well combined and bubbly.
Step 9: Add in the chilis and sour cream. Stir until well mixed. Make sure not to allow the mixture to boil.
Step 10: Remove from the heat.
Step 11: Pour the sauce over the prepared enchiladas and sprinkle the rest of the cheese on top.
Step 12: Place the enchiladas inside the preheated oven and bake for about 20 minutes.
Step 13: Broil for another 3 minutes or until the cheese turns brown.
Step 14: Remove from the oven and allow it to cool at room temperature.
Step 15: Serve and enjoy!
