Ingredients:
2 chicken breasts boneless, skinless, bite-size pieces, can double the recipe if you want 4 breasts
2 cups barbecue sauce does not use honey style as there is too much sugar and may display burn message
3 tablespoons soy sauce
1 tablespoon cornstarch at end to thicken the sauce when chicken is done
¼ cup orange marmalade
½ onion cut into large pieces – optional
chives or green onion to garnish
¼ cup water or chicken broth
Directions:
Step 1: Slice the chicken breasts into small bites.
Step 2: Put the chicken, chicken broth, barbecue sauce, soy sauce, and onion in the Instant Pot.
Step 3: Stir everything until well combined. Make sure that the chicken pieces are well coated with the sauce.
Step 4: Press the “Pressure” button on your Instant Pot and cook everything on a high setting for about 4 minutes. Make sure to seal the steam valve.
Step 5: Open the lid after doing a quick release.
Step 6: Press the button “Sauté” on your Instant Pot.
Step 7: In a small mixing bowl, add the cornstarch, and a few tablespoons of the sauce from the pot. Whisk until well combined.
Step 8: Pour the cornstarch mixture into the Instant Pot. Stir until well combined.
Step 9: Add in the marmalade and stir for about 2 minutes or until well mixed and bubbly.
Step 10: Turn your Instant Pot off.
Step 11: Serve the orange chicken over steamed or fried rice. Enjoy!
