Ingredients:
6-7 Boneless Skinless Chicken Thighs
1 tbsp Butter
1 tbsp Oil
2 Garlic Cloves
¼ c Chicken Stock
2-3 sprigs Fresh Rosemary
For Spice Rub:
2 tbsp Light Brown Sugar
1 tsp Garlic Powder
½ tsp Onion Powder
½ tsp Smoked Paprika
½ tsp Chili Powder (ref note 3)
¼ tsp Black Pepper
½ tsp Salt
Directions:
Step 1: In a large mixing bowl, add all the ingredients for the Spice Rub. Stir until well combined.
Step 2: Use paper towels to pat dry the chicken thighs.
Step 3: Rub the seasoning all over the chicken.
Step 4: Place a heavy cast-iron skillet on the stove and turn the heat to medium.
Step 5: Add butter or oil and allow it to melt/become hot.
Step 6: Add the garlic cloves and sauté for 30 seconds or until aromatic and slightly toasted.
Step 7: Add the chicken thighs and cook for 5 minutes on one side until golden brown.
Step 8: Flip the chicken thighs and cook the other side for 2 minutes or until brown as well.
Step 9: Add ¼ cup of chicken stock and rosemary sprig. Stir and scrape the bottom of the pan to get the brown bits.
Step 10: Cover with lid and turn the heat up to high, then cook for 2 more minutes.
Step 11: Remove the cover and reduce the heat to medium. Simmer until the sauce becomes thick.
Step 12: Remove from the heat.
Step 13: Serve over rice and spoon the yummy sauce on top. Enjoy!

You can serve this dish with veggies or beans.
