Ingredients:
14 oz cauliflower florets, cut into bite-size pieces
2.5 oz Pepperoni
2 lbs Italian Sausage, if in casings remove from the casing before cooking
1 tbsp Olive Oil
8 oz Mushrooms, sliced
1 Green Pepper, cut into bite-size pieces
12 oz Mozzarella cheese, shredded
1.5 c Low Carb Pasta Sauce, we use Rao’s Homemade Marinara
¼ c Parmesan cheese, powdered
1 tsp Italian Seasoning
Directions:
Step 1: Steam the cauliflower and slice it into small cuts.
Step 2: Put the cauliflower in a microwavable bowl with 1 cup of water.
Step 3: Cover the bowl with a damp towel and heat it inside the microwave for about 3 minutes on a high setting or until soft.
Step 4: Remove the cauliflower from the microwave and drain.
Step 5: Use paper towels to pat dry the cauliflower cutlets.
Step 6: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 7: Place a large skillet on the stove and turn the heat to medium-high.
Step 8: Add the Italian sausage and cook for 15 minutes or until brown and greasy.
Step 9: Remove the sausage from the skillet along with its grease.
Step 10: Add olive oil to the same skillet allow it to become hot.
Step 11: Add the mushrooms and sauté for 10 minutes or until the water has evaporated. Remove from the heat and set aside.
Step 12: Apply nonstick cooking spray in a 13×9-inch casserole dish.
Step 13: Spread about ½ cup of the pasta sauce on the prepared dish.
Step 14: In a large mixing bowl, add the cooked Italian sausage, green peppers, mushrooms, and cauliflower. Toss until well combined.
Step 15: Add half of the mixture to the bottom of the prepared casserole dish and spread it evenly.
Step 16: Spread half of the pasta sauce, half of the pepperonis, and 6 ounces of Mozzarella cheese on top.
Step 17: Repeat step 16 to the rest of the ingredients.
Step 18: In a small mixing bowl, add the Italian seasoning and Parmesan cheese. Stir until well combined.
Step 19: Sprinkle the cheese mixture on top of the casserole and lay 10 pepperoni slices as well.
Step 20: Put the casserole dish inside the preheated oven and bake for about 30 minutes or until the cheese has melted completely.
Step 21: Remove from the oven and allow it to cool at room temperature.
Step 22: Serve and enjoy!
