Ingredients:
3 c all-purpose flour plus a little extra for sprinkling
1 tsp baking powder
1 tsp salt
⅓ c vegetable oil
1 c hot water not boiling water
Directions:
To Make the Dough:
Step 1: Add the baking powder, all-purpose flour, and salt in a large bowl. Whisk until well combined.
Step 2: Create a small well in the middle, then add oil and stir until well mixed.
Step 3: Add in hot water and stir until well mixed.
Step 4: Knead the dough until smooth for about 2 minutes.
Step 5: Place the dough on a floured flat surface, then cut it into 16 even pieces.
Step 6: Form each piece into a small ball by rolling them.
Step 7: Allow the balls to sit at room temperature for 15 minutes to 1 hour.
Step 8: Use your palm to press each ball, then roll each into 6-inches thin.
To Cook the Tortillas:
Step 1: Place a cast-iron skillet on the stove and turn the heat to medium-high.
Step 2: Add 1 tortilla and cook for 30 seconds to 1 minute or until done.
Step 3: Flip the tortilla and cook the other side for 30 seconds to 1 minute as well.
Step 4: Serve and enjoy!
Notes:
Make sure not to stack the uncooked tortillas because they will become soggy and will stick together.
After cooking the tortillas, wrap them in damp paper towels.
When reheating, place them inside the microwave and heat for 30 seconds until warm.
