1 and ½ tsp granulated sugar
1 envelope active dry yeast
2 tsp salt
1 ½ c warm water, 110 – 115 degrees (F)
2 tbsp plus 2 tsp olive oil, divided
For the garlic coating:
1 stick unsalted butter
6 cloves garlic, minced
½ c fresh parsley, minced
1 and ½ tsp garlic salt
¼ c Parmesan cheese, grated
Directions:
Step 1: Add the sugar, yeast, flour, and salt in the bowl of a stand mixer. Whisk until well mixed.
Step 2: Add in 2 tablespoons of olive oil and warm water. Whisk on low speed until the dough turns into a ball all over the hook. Make sure to add more flour and water if the texture of the dough is too sticky.
Step 3: Place the dough on a floured flat surface, then knead until it forms into a firm ball shape.
Step 4: Brush a large bowl with 2 tablespoons of olive oil, then add in the dough. Cover it with plastic wrap and allow it to double its size for about 90 minutes in a warm place.
Step 5: Place the dough back to the floured flat surface and split it into two even pieces.
Step 6: Put each dough on individual plastic wrap and allow them to sit for about 10 minutes.
Step 7: Sprinkle flour on top of each dough and cut each into four equal pieces.
Step 8: Arrange the pieces by pressing them together, then cut them into two. You will make 16 even pieces of dough.
Step 9: Sprinkle flour on each slice and shape each into a ball.
Step 10: Stretch each ball and tie each into a knot.
Step 11: Arrange the knots onto the prepared baking sheet and cover it with plastic wrap. Allow the knots to rest for 30 minutes more.
Step 12: Prepare the oven and preheat to 230 degrees C or 450 degrees F.
Step 13: Remove the cover of the baking sheet and place the garlic knots inside the preheated oven. Bake for about 20 minutes or until they turn golden brown.
