Ingredients:
½ c vegetable oil, or more, as needed
1 c buttermilk
¾ c all-purpose flour
½ c cornstarch
1 large Egg
1 tbsp hot sauce
Kosher salt and freshly ground black pepper, to taste
1 lb boneless, skinless chicken breasts, cut into 1-inch chunks
1 c Panko*
For the Sauce:
¼ c mayonnaise
2 tbsp sweet chilli sauce
1 tbsp honey
2 tsp Frank’s Hot Sauce
Directions:
Step 1: In a small mixing bowl, add the mayonnaise, Frank’s Hot Sauce, honey, and sweet chilli sauce. Whisk until well combined.
Step 2: Place a large skillet on the stove and turn the heat to medium-high.
Step 3: Add in the vegetable oil and allow it to become hot.
Step 4: In a large mixing bowl, add the flour, buttermilk, egg, hot sauce, cornstarch, salt, and pepper. Whisk until well mixed.
Step 5: Dip each chicken into the buttermilk and press it into the Panko until well coated. Repeat steps until all the chicken breasts are well coated.
Step 6: Fry the chicken in batches into the hot oil for about 2 to 3 minutes or until crispy.
Step 7: Place the fried chicken onto a clean plate lined with paper towels to drain any excess oil.
Step 8: Drizzle the sweet chilli sauce on top.
Step 9: Serve and enjoy!
