Ingredients:
For the sugar cookie bars:
1 stick (½ c) salted butter softened to room temp.
1 c sugar
1 Egg
1 tsp vanilla
2 c all-purpose flour
1 teaspoon baking powder
¼ c festive sprinkles
For the frosting:
2 c powdered sugar
1 stick (½ c) salted butter softened to room temp.
3 tablespoons cream cheese softened
1 tablespoon vanilla
2 tablespoons milk
additional sprinkles
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Line with parchment paper a 9×9-inch baking pan.
Step 3: In a large mixing bowl, add the sugar and butter. Beat until well combined.
Step 4: Add in the egg and vanilla. Beat until well blended.
Step 5: Add in the baking powder and flour gradually and beat every addition until the batter becomes thick.
Step 6: Transfer the batter into the prepared baking pan and spread it evenly.
Step 7: Place the pan inside the preheated oven and bake for about 20 minutes or until golden brown.
Step 8: Remove from the oven and allow the cookie bars to cool at room temperature.
Step 9: Remove the cookie bars from the parchment paper.
Step 10: In a medium mixing bowl, add the butter, powdered sugar, vanilla, milk, and cream cheese. Use an electric mixer to beat until well blended.
Step 11: Frost the cookie bar generously.
Step 12: Top the cookie bar with sprinkles.
Step 13: Slice the cookie bar into small squares.
Step 14: Serve and enjoy!
