Ingredients:
3-4 boneless skinless chicken breasts, cooked and diced
1 stalk of celery, chopped
½ white onion, diced
2 tsp minced garlic
½ c shredded carrots
1 tbsp olive oil
4 c low sodium chicken broth
salt and pepper, to taste
1 tsp thyme
16 oz potato gnocchi
2 c half and half
1 c fresh spinach, roughly chopped
Directions:
Step 1: Place a large pot on the stove and turn the heat to medium.
Step 2: Add olive oil and allow it to become hot.
Step 3: Add in celery, onions, carrots, and garlic. Saute for about 2 to 3 minutes or until translucent and aromatic.
Step 4: Add in the chicken broth, chicken, thyme, salt, and pepper. Allow the mixture to boil.
Step 5: Add in the Gnocchi and stir until well combined. Allow the mixture to boil again for about 3 to 4 minutes.
Step 6: Turn the heat down and simmer the mixture for about 10 minutes.
Step 7: Add in spinach and half-and-half, then cook for 1 to 2 minutes or until the spinach is wilted.
Step 8: Add more salt and pepper if needed.
Step 9: Ladle the soup into a serving bowl and sprinkle fresh parsley on top.
Step 10: Serve and enjoy!
