Ingredients:
1 large chicken breast
1 tablespoon taco seasoning
¼ onion, diced
1 ½ c sour cream
1 ½ c Cheddar Cheese
8 small tortillas
2 (10 ounces) cans enchilada sauce
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Season with taco seasoning the chicken breast.
Step 3: Place it inside the preheated oven and bake for about 20 to 30 minutes or until done.
Step 4: Remove the chicken breast from the oven and use two forks to shred it into small pieces.
Step 5: In a medium mixing bowl, add the chicken, sour cream, 1 cup of cheese, and onion. Stir until well combined.
Step 6: Fill with the chicken mixture each tortilla chip and roll them side down.
Step 7: Prepare a 13×9-inch baking dish by spreading a little of the enchilada sauce on the bottom.
Step 8: Arrange the rolled tortillas on the prepared baking dish.
Step 9: Pour the remaining enchilada sauce on top of the tortillas.
Step 10: Cover the baking dish with aluminium foil.
Step 11: Place it inside the preheated oven and bake for 5 minutes or until the cheese has melted completely.
Step 12: Remove the sour cream enchiladas from the oven and allow them to sit at room temperature to cool for at least 5 minutes.
