Ingredients:
1 bread boule round loaf of rustic bread
1 wheel of brie about 12 oz, top of rind removed (use triple cream if you can)
½ c whole berry cranberry sauce
2 tbsp fresh thyme leaves
2 tbsp olive oil
Kosher salt
Fresh ground pepper
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Cut the top quarter of the bread.
Step 3: Trace a circle around the bread and scoop out the centre.
Step 4: Cut around the sides about 1.5-inches apart, then cut it about ¾. Make sure not to cut it all the way.
Step 5: Brush with olive oil the inside of the bread and sprinkle salt and pepper to taste.
Step 6: Sprinkle ½ of the thyme and put the brie wheel in the middle, then sprinkle more thyme on top.
Step 7: Spoon the cranberry sauce on top of the brie.
Step 8: Place the bread inside the preheated oven and bake for about 20 minutes.
Step 9: Remove from the oven.
Notes:
Make sure to use a triple cream brie for this recipe.
You can use store-bought cranberry sauce for this recipe; just make sure that the berry is whole.
