Ingredients:
2 lbs beef stew meat
⅓ c flour
1-2 tbsp oil
4 medium potatoes washed and cubed (I usually peel mine too but it isn’t necessary)
3 c carrots baby carrots or diced carrots, either way
1 c celery diced (optional)
2 tsp garlic minced
1 can diced tomatoes
3 c beef broth
2 tbsp ranch seasoning
Directions:
Step 1: Place the meat and flour in a large resealable bag. Seal the bag and shake until well combined.
Step 2: Place a skillet on the stove and turn the heat to medium-high.
Step 3: Add in oil and allow it to become hot.
Step 4: Add in the floured beef as well as the garlic. Cook until brown on both sides and aromatic.
Step 5: Peel the veggies and chop them into small pieces.
Step 6: Place the chopped veggies into a slow cooker.
Step 7: In a small mixing bowl, add in the rest of the flour and 1 cup of broth. Stir until well combined, and then pour it into the skillet with the meat.
Step 8: Simmer the meat mixture for about 5 minutes or until thick.
Step 9: Transfer the meat mixture into the crockpot and add in the rest of the ingredients. Stir until well combined.
Step 10: Cover the slow cooker and cook for 6 to 8 hours on low heat.
Step 11: Spoon the beef stew over rice.
Step 12: Serve and enjoy
