Ingredients:
1 pound lean ground beef
1 c yellow onion, diced
10.5 ounces condensed chicken broth
2 c water
2 c instant rice
1 c medium salsa
½ c Heinz chilli sauce
8.75 ounces canned corn, not drained
4 ounces canned chopped green chillies, not drained
1-ounce taco seasoning
3 c shredded mozzarella and cheddar cheese
1 teaspoon dried chives
Directions:
Step 1: Place a large saucepan on the stove and turn the heat to medium-high.
Step 2: Add in butter or margarine and allow it to melt.
Step 3: in the ground beef and cook until brown and crumbly.
Step 4: Add in the onions and cook until translucent.
Step 5: Remove any excess grease and add the water and condensed chicken broth.
Step 6: Add in the instant rice and stir until well submerged.
Step 7: Simmer for a few minutes or until the liquid is absorbed by the rice. Make sure to stir from time to time.
Step 8: Add in the chilli sauce, canned corn, salsa, chopped green chillies, taco seasoning, and salsa. Stir until well combined and simmer for a few minutes until done.
Step 9: Remove from the heat and add two cups of shredded cheese into the rice and ground beef mixture. Stir until well mixed.
Step 10: Sprinkle the rest of the shredded cheese on top and make sure not to stir.
Step 11: Garnish with dried chives and allow it to sit at room temperature until the cheese has melted completely.
Step 12: Serve warm and enjoy!
