Ingredients:
2 c Enchilada sauce
8 -8 inch Flour tortillas
2 pounds of chicken shredded
¼ c Taco seasoning
½ c yellow onion diced
12 oz Cheddar cheese shredded
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Place a skillet on the stove and turn the heat to medium-high.
Step 3: Add in the shredded chicken, taco seasoning, ¼ cup of water, and onions. Stir and cook for about 5 minutes or until the liquid has dissolved partially.
Step 4: Apply cooking spray in an 11×9-inch casserole dish.
Step 5: Add in ½ cup of enchilada sauce and spread it evenly on the bottom.
Step 6: Cover the enchilada sauce with two tortillas.
Step 7: Top the tortillas with ⅓ of the chicken.
Step 8: Top the chicken with ½ cup of enchilada sauce and 1 cup of cheese.
Step 9: Repeat the process until everything is arranged in layers.
Step 10: Top the enchiladas with two more tortillas, enchilada sauce, and cheese.
Step 11: Cover the casserole dish with foil.
Step 12: Place it inside the preheated oven and bake for 30 minutes.
Step 13: Remove the foil cover and bake for another 10 minutes.
Step 14: Remove from the oven and allow it to cool at room temperature.
Step 15: Serve and enjoy!
