Ingredients:
2 whole chicken breasts, uncooked
2 c chicken broth
1 tsp garlic powder
1-10 oz can diced tomatoes
1 medium onion, diced
12 corn tortillas
2 c grated Cheddar cheese
2 c grated Monterey Jack cheese
Homemade Red Enchilada Sauce:
2 tbsp vegetable oil
2 tbsp flour
4 tbsp chilli powder
½ tsp garlic powder
½ tsp salt
½ tsp cumin
¼ tsp onion powder
¼ tsp cayenne pepper
2 c chicken broth
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: In a large saucepan, add in the tomatoes, garlic powder, sliced onion, whole chicken breasts, and chicken broth.
Step 3: Place the saucepan on the stove and turn the heat to low and simmer for about 30 minutes or until the chicken breasts are fork-tender.
Step 4: Remove from the heat and let it sit at room temperature to cool.
Step 5: Place the chicken breasts on a plate and shred it into small pieces. Discard the rest of the ingredients in the saucepan.
Step 6: Add ½ cup of the enchilada sauce in a 13×9-inch baking pan and spread it evenly on the bottom.
Step 7: Drop ½ teaspoon of enchilada sauce in the middle of each of the tortillas.
Step 8: Drop 1 tablespoon of the shredded chicken over the enchilada sauce and top each with a generous amount of the cheeses.
Step 9: Roll the tortillas and arrange them into the prepared baking pan.
Step 10: Spread the rest of the enchilada sauce and shredded cheese over the rolled enchiladas.
Step 11: Place the baking pan inside the preheated oven and bake for 20 minutes or until done.
Step 12: Remove from the oven and allow it to cool at room temperature.
How to Make the Homemade Red Enchilada Sauce:
Step 1: In a medium saucepan, add in the oil and flour.
Step 2: Place it on the stove and turn the heat to medium.
Step 3: Whisk and cook for two minutes or until boiling.
Step 4: Add in the seasonings and stir until well combined.
Step 5: Add in the chicken broth and simmer for 10 minutes on low heat until thick.
Step 6: Serve and enjoy!
