Ingredients:
1 tbsp olive oil
1 pound chicken breast boneless and skinless
¼ tsp salt
¼ tsp pepper
3 cloves garlic minced
⅔ c heavy cream
⅔ c milk
1 c Parmesan cheese shredded
8 oz fettuccine pasta (for a gluten-free version, use gluten-free brown rice fettuccine)
2 c broccoli florets, blanched
7 strips bacon
Directions:
Step 1: Place a skillet on the stove and turn the heat to medium-high.
Step 2: Add in olive oil and allow it to become hot.
Step 3: Season with salt and pepper the chicken breasts.
Step 4: Lay the chicken breasts into the skillet and cook each side for 2 to 4 minutes or until brown.
Step 5: Remove the chicken breasts from the heat and place them on a clean plate. Cover and allow it to cook on its own.
Step 6: Slice the chicken breasts into small pieces.
Step 7: In the same skillet, add in the minced garlic and sauté until aromatic.
Step 8: Add in the milk and heavy cream, and then allow it to simmer over low heat.
Step 9: Add in the cheese and stir until melted completely.
Step 10: Refer to the directions provided on the pasta package on how to cook it.
Step 11: Drain the pasta and rinse with cold water to stop the cooking process.
Step 12: Toss in the pasta into the skillet as well as the cooked broccoli and cooked bacon. Stir until well combined.
Step 13: Sprinkle more salt and pepper if needed.
Step 14: Remove from the heat and place the sliced chicken on top.
Step 15: Serve and enjoy!
