Ingredients:
1 tsp olive oil
1 tbsp minced onion optional
1 pound smoked sausage sliced into ½ inch pieces
1 c chicken stock
2 pounds potatoes cubed
32 ounces canned green beans drained
1 tsp Cajun seasoning
Directions:
Step 1: Press the “sauté” button on the Instant Pot and let it heat up for 2 minutes.
Step 2: Add in the olive oil, minced onion, and sausage. Saute for about 2 minutes or until the brown and translucent. Turn off the Instant Pot.
Step 3: Add in the chicken stock and make sure to scrape the bottom to get the brown bits.
Step 4: Place the potatoes over the sausage and sprinkle Cajun seasoning on top.
Step 5: Place the drained green beans over the sausage as well.
Step 6: Seal the Instant Pot and pressure cook for 2 minutes over high pressure.
Step 7: Release the pressure for 5 minutes.
Step 8: Stir everything until well combined.
Step 9: Serve and enjoy!
