Ingredients
Shells:
1 ¾ c (250grams) unbleached all-purpose flour (scoop and level to measure)
1 ½ tablespoons (18grams) granulated sugar
¼ teaspoon salt
3 tablespoons (43grams) unsalted butter, diced into small pieces
⅓ c Marsala wine*, then more as needed
1 large Egg
1 Egg white
Vegetable oil or shortening, for frying (about 8 c)
Filling:
32 ounces whole milk ricotta, strained**
1 ½ c (180grams) powdered sugar***
¾ c (126grams) mini chocolate chips
¼ teaspoon ground cinnamon****
Chopped unsalted pistachios, optional
Directions:
To Make the Cannoli Shells:
Step 1: Pulse the flour, salt, and sugar in a food processor for about 10 times.
Step 2: Add in the butter and pulse until well combined.
Step 3: Add in the whole egg and marsala wine, then pulse until soft. Make sure to add a few tablespoons of wine if needed.
Step 4: Apply cooking oil in a bowl. Place the round batter into the prepared bowl.
Step 5: Cover the bowl with plastic wrap and allow it to sit for 30 minutes to 2 hours at room temperature.
Step 6: Place a large pot on the stove and add in 1 ½-inch of vegetable oil. Turn the heat to about 355 degrees F.
Step 7: Sprinkle flour on a flat surface and roll half of the dough.
Step 8: Slice the dough about 3 ½-inch with a cookie cutter.
Step 9: Apply the cannoli forms with cooking spray and warp each individually.
Step 10: Brush egg white with your finger or with a brush, then press them on opposite sides.
Step 11: Add the cannoli into the hot oil and cook each for 1-2 minutes or until golden brown.
Step 12: Place the cooked cannoli on a plate lined with paper towels to drain any excess oil.
Step 13: Allow the cannoli to cool at room temperature.
To Make the Filling:
Step 1: In a large mixing bowl, add in the powdered sugar, ricotta, chocolate chips, and cinnamon. Stir until well combined.
Step 2: Transfer the mixture into a piping bag and fill each cannoli shell with it.
Step 3: Serve and enjoy!
