This cake has always been a part of my family since I was a little kid! My mom made this all the time and I am so glad that she taught me the recipe because now, I get to share it with my kids and to you as well! Feel free to add more ingredients to this very easy and simple cake recipe. You can frost it whatever you like. My kids could not get enough of its rich coconut flavour. It is so irresistible! Oh, man, give it a try and I am 100 per cent sure that you are going to love it!
Ingredients:
My coconut cake:
1 cup Crisco
5 Eggs
2 ½ cups Cake flour
1 teaspoon baking powder
1 teaspoon vanilla flavouring
Directions:
Step 1: In a medium mixing bowl, add in the Crisco, cake flour, and baking powder. Whisk until well combined.
Step 2: Add in the eggs gradually and beat every addition.
Step 3: Add in the vanilla flavouring and whisk until well combined.
Step 4: Transfer the batter into three 9-inch cake pans.
Step 5: Place the cake pans inside the oven and bake for 30 minutes at 175 degrees C or 350 degrees F until done.
Step 6: Remove from the oven and allow it to cool at room temperature.
Step 7: While the cake is cooling, make the Pineapple Filling.
Step 8: Place a 1 ½ quart saucepan on the stove and turn the heat to medium.
Step 9: Add in 1 can of crushed pineapple, butter, and brown sugar. Stir and cook for about 10 minutes or until done.
Step 10: Spread the filling over the cooled cake.
Step 11: Serve and enjoy!
Notes:
You can top this cake with sour cream frosting instead.
Just mix sour cream, 1 teaspoon butter, 1 can coconut, and butter in a mixing bowl then spread it over the cooled cake.
