Ingredients:
5 slices of bacon
1 medium Vidalia onion, diced (any sweet onion may be substituted)
2 lbs fresh whole green beans, ends removed
1 ½ c low-sodium chicken broth
2 tsp garlic salt, divided
½ tsp black pepper, divided
2 lbs small red/new potatoes, halved
2 tbsp butter, cubed
Directions:
Step 1: Place a large pot or a Dutch oven on the stove and turn the heat to medium.
Step 2: Add in the bacon and cook until greasy and crispy.
Step 3: Place the crispy bacon on a plate lined with a paper towel to drain any excess grease.
Step 4: Add in the sliced onion into the pot with the bacon grease and sauté for 2 minutes or until translucent.
Step 5: Add in the chicken stock, green beans, ¼ teaspoon of black pepper, and 1 teaspoon of garlic salt. Stir until well combined.
Step 6: Cover and reduce the heat to low, and then simmer for 30 minutes.
Step 7: Remove the cover and season with garlic salt on top of the beans.
Step 8: Place the sliced potatoes on top of the green beans and drop a dollop of butter on top.
Step 9: Season the top with ¼ teaspoon of pepper and ½ teaspoon of garlic salt.
Step 10: Cover the pot and simmer for about 30 minutes more or until the potatoes are fork-tender.
Step 11: Stir until well combined and crumble the crispy bacon on top.
Step 12: Remove from the heat.
Step 13: Serve warm and enjoy!
