Ingredients:
7 medium Yukon Gold Potatoes
Cheese Sauce:
4 tablespoons butter
1 yellow onion, sliced into strings
3 cloves garlic, minced
¼ cup all-purpose flour
1 ½ cup half and half
¾ tsp dried rosemary
½ tsp dried oregano
½ tsp dried thyme
½ tsp sage
2 cup cheddar cheese, shredded
½ cup Gruyere cheese, shredded
1 cup cooked ham, diced
Topping/Garnish:
¼ cup Parmesan, finely grated into a powder
1 tablespoon Fresh Parsley, roughly chopped
Directions:
How to make the Cheese Sauce:
Step 1: Shred the Gruyere and cheddar and allow them to sit at room temperature. Set aside about ½ cups for later.
Step 2: Place a medium saucepan on the stove and turn the heat to medium.
Step 3: Add in the butter and allow it to melt.
Step 4: Add in the chopped onions and sauté for 20 minutes or until brown.
Step 5: Add in the minced garlic and sauté for 1 minute or until aromatic.
Step 6: Add in the flour and stir for 1 minute until thick.
Step 7: Place milk or half-and-half in the microwave and heat it for 30 seconds.
Step 8: Pour the heated milk into the saucepan and stir until well combined.
Step 9: Add in ¾ teaspoon of rosemary, thyme, sage, and ½ teaspoon of oregano. Reduce the heat and simmer for 5 minutes.
Step 10: Remove from the heat and add in the ½ cup of Gruyere and 1 ½ cups of shredded cheese. Stir until well combined.
Step 11: Add in the ham and stir until well mixed.
How to assemble the Casserole:
Step 1: Ready the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Wash, peel, and slice the potatoes into ⅛-inch thick pieces.
Step 3: Apply cooking spray in a 9×13-inch casserole dish.
Step 4: Arrange by overlapping ⅓ of the sliced potatoes into the prepared casserole dish, then season with salt and pepper to taste.
Step 5: Spread ⅓ of the cheese sauce over the potatoes.
Step 6: Repeat the steps until everything is arranged in layers.
Step 7: Sprinkle the reserved ham and cheddar cheese on top.
Step 8: Bake inside the preheated oven for 30 minutes or until the cheese has melted completely.
Step 9: Serve and enjoy!
Make this the night before:
Step 1: Assemble everything and bake for 30 minutes at 200 degrees C or 400 degrees F.
Step 2: Remove from the oven and allow it to cool at room temperature before putting it in an airtight container.
Step 3: Place the container inside the freezer. It can last up to 2-3 weeks.
Step 4: Thaw in the fridge overnight.
Step 5: Sprinkle ¼ cup of finely shredded Parmesan on top.
Step 6: Bake inside the oven at 375 degrees F for 25 minutes or until the cheese has melted completely.
Crock Pot Method:
Step 1: Assemble the casserole and cook for 4 to 5 hours on high heat.
Step 2: Remove from the heat and do not remove the cover. Allow it to sit for 15 minutes.
Step 3: Remove the cover and sprinkle parsley on top.
