This easy tortellini and sausage soup is a superb, creamy, and delicious soup to fill you up during the cold nights. Ingredients:
1 pound Italian sausage (browned and drained)
2 (15ounces) cans Italian diced tomatoes
4 c vegetable or chicken broth
8 oz cream cheese (cubed)
1 (20 ounces) bag of frozen cheese tortellini
3-4 c fresh spinach
Directions:
Step 1: In a slow cooker, add in the cooked sausage, diced tomatoes, cream cheese, and broth. Stir until well combined.
Step 2: Cover the slow cooker and cook for 4 hours on a low setting until the cream cheese has melted completely.
Step 3: Add in the frozen tortellini and spinach. Cook for another 30 minutes or until the pasta is al dente.
Step 4: Remove from the heat.
Step 5: Serve hot and enjoy!
Notes:
Place any leftovers in the fridge. It can last for up to 3 days.
Make sure to serve it right away because the tortellini might be overcooked.
Feel free to use refrigerated tortellini for a faster cooking time.
For an extra kick, try adding red pepper and cayenne.
