In about 30 minutes, you will have a meal to remember! Some make this a side dish, but for me, it is more than enough to eat on its own. I feel so satisfied and full every time I have this Creamy Garlic Orzo. If you are a huge fan of garlic, this will fit you perfectly! If you think that this recipe can do better, try adding more of your preferred ingredients to it. Sometimes, I add mushrooms on top and they taste amazing! Oh, man, you are so in for a treat! Ingredients:
4 tablespoon vegan butter separated
2 c orzo
3 c vegetable stock or bouillon & water
½ c onion diced
3 garlic cloves minced
½ c nutritional yeast
¾ c rice milk plain, unsweetened
1 teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried parsley
2 teaspoon lime juice
Directions:
Step 1: Place a large skillet on the stove and turn the heat to low-medium.
Step 2: Add in the vegan butter and allow it to melt.
Step 3: Add in the garlic, onion, and orzo. Sauté’ for about 5 minutes or until the orzo becomes light brown. Make sure to stir frequently.
Step 4: Add in the vegetable stock gently and allow it to boil.
Step 5: Simmer for about 13 minutes while stirring from time to time.
Step 6: Add in the remaining 2 tablespoons of butter, nutritional yeast, and rice milk. Stir until well mixed, then allow it to boil again.
Step 7: Reduce the heat and add in the lime juice, parsley, salt, and pepper. Simmer for another minute.
Step 8: Remove from the heat.
Step 9: Serve immediately. Enjoy!
