Ingredients:
Olive oil
1 (14 oz) smoked sausage, sliced on the bias into thin medallions
2 tbsp butter
2 onions, quartered and thinly sliced
1 garlic clove, pressed through a garlic press
Salt
¾ tsp freshly cracked black pepper
1 ½ tsp paprika
10 medium-size red skin potatoes, peeled and sliced into ½” thick circles (about 2 ¾ pounds)
1 ½ c chicken stock
1 tbsp chopped flat-leaf parsley
Directions:
Step 1: Place a large, non-stick pot on the stove and turn the heat to medium-high.
Step 2: Add 1 tablespoon of oil and allow it to become hot.
Step 3: Add in the smoked sausage medallions and cook for a few minutes until brown.
Step 4: Remove the cooked sausage from the pot and set aside.
Step 5: Add the butter into the pot and let it melt.
Step 6: Add in the chopped onions and cook for about 5 to 7 minutes or until golden brown.
Step 7: Add in the garlic, paprika, salt, and pepper. Stir until well mixed and aromatic.
Step 8: Add in the sliced potatoes and stir until well combined.
Step 9: Add in the chicken stock and stir until well mixed.
Step 10: Cover the pot with an askew lid and simmer for 15 minutes on medium-low heat. Make sure to stir from time to time.
Step 11: Remove the cover and simmer for another 10 minutes or until the potatoes are tender and the sauce is thick.
Step 12: Put the caramelized smoked sausage back into the pot and stir until well combined.
Step 13: Add in parsley, olive oil, salt, and pepper. Stir until well mixed.
Step 14: Ladle the goulash into a servings bowl.
Step 15: Serve with toasted bread. Enjoy!
