Ingredients:
1 tablespoon oil
1 – 14 ounces kielbasa – sliced and cut in half
1 medium sweet onion, sliced and cut in half
6 medium potatoes – peeled, washed and sliced – I used my mandolin to keep thinness consistent – about ¼ inch
2 cups cheddar or favourite shredded cheese
WHITE SAUCE:
3 ½ tablespoons butter
4 ½ tablespoons flour
1 ½ cups chicken broth
1 cup heavy cream
½ cup milk
¼ teaspoon dried thyme
½ – ¾ teaspoon kosher salt
½ teaspoon pepper
Directions:
Step 1: Place a medium skillet on the stove and turn the heat to medium-high.
Step 2: Add in oil and allow it to become hot.
Step 3: Add in the kielbasa and onions. Cook until done.
Step 4: Remove from the heat and set aside.
Step 5: Wash, peel, and slice the potatoes. Make sure to put them in a bowl with cold water.
To Make the Sauce:
Step 1: Place a medium saucepan on the stove and turn the heat to medium.
Step 2: Add in butter and allow it to melt.
Step 3: Add in the flour and whisk for 1 minute or until thick.
Step 4: Add in the broth and whisk until well blended. Make sure to have no lumps.
Step 5: Add in the milk, cream, and seasonings, then stir until thick. Add more seasonings if needed.
Step 6: Ladle enough sauce to cover the bottom of a 4-quart casserole.
Step 7: Arrange half of the potatoes in a layer followed by the kielbasa, onion mixture, and ½ of the cheese.
Step 8: Cover the casserole and place it inside the oven. Bake for 45 minutes at 350 degrees F.
Step 9: Remove the cover and bake for another 40 minutes or until the potatoes are soft.
Step 10: Remove from the oven and allow it to cool at room temperature .
Step 11: Serve and enjoy!
