I get so tired of feeding my kids healthy meals. I am so glad that my friend gave me this amazing recipe. Now, they can’t get enough of it. It’s a win-win situation for me because it is so easy to make and my kids want to eat it all the time. Try it and enjoy!
Ingredients:
2 pounds boneless chicken breasts (about 3 large breasts), cut into cubes.
5 medium sweet potatoes, cut into 1” cubes
2 heads broccoli, cut into small florets.
1 c buffalo sauce, New Primal or Franks
½ c avocado oil or olive oil
½ teaspoon salt
1 teaspoon pepper
2 teaspoon garlic powder
1 c shredded cheddar cheese
¼ c chopped green onion
½ c cooked turkey bacon
drizzle of ranch
Directions:
Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.
Step 2: Apply cooking spray in a 9×13-inch casserole dish.
Step 3: Slice the chicken, potatoes, and broccoli into small pieces.
Step 4: In a small mixing bowl, add the avocado oil, buffalo sauce, garlic, salt, and pepper. Stir until well mixed.
Step 5: In a separate large mixing bowl, add in the sweet potatoes and ½ of the buffalo sauce. Toss until the potatoes are covered with the sauce.
Step 6: Transfer the sweet potatoes into the prepared casserole dish and roast it for about 30 minutes. Flip it over after 15 minutes to cook the other side.
Step 7: In the same bowl as the sweet potatoes, add the broccoli and chicken. Add the rest of the buffalo sauce and toss until the potatoes are completely covered with it.
Step 8: Remove the casserole dish from the oven and add the chicken and broccoli on top.
Step 9: Put it back inside the oven and bake for another 20 to 25 minutes or until an instant-read thermometer inserted in the middle reaches 165 degrees F.
Step 10: Remove from the oven and top it with the cooked bacon, green onion, and cheese.
Step 11: Put it back inside the oven and bake for another 5 minutes until the cheese has melted completely.
Step 12: Remove from the oven let it sit at room temperature to cool.
Step 13: Top with blue cheese or ranch.
Step 14: Serve and enjoy!
Note:
This can last up to 5 days in the fridge and longer if in the freezer.
