Ingredients:
1 ½ lb Ground Beef, (85/15)
¼ yellow onion, finely chopped
⅔ c seasoned dry breadcrumbs
⅓ c whole milk
1 large Egg, lightly beaten
½ tsp Kosher salt
¼ tsp coarse ground black pepper
2 lbs potatoes, peeled and cut into 1-inch chunks
⅓ c unsalted butter
½ c whole milk
1 tsp kosher salt
¼ tsp coarse ground black pepper
½ c bacon bits, cooked and crumbled
1 c cheddar cheese, shredded
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: In a large mixing bowl, add in the ground beef, breadcrumbs, milk, onion, salt, and pepper. Stir until well mixed.
Step 3: Transfer the mixture into a 9×9-inch baking dish and press it on the bottom.
Step 4: Place it inside the preheated oven and bake for 15 minutes or until done.
Step 5: Discard the excess grease.
Step 6: Place a pot on the stove and pour in water. Turn the heat to high and allow it to boil.
Step 7: Add in the potatoes and cook for about 15 minutes. Drain the water.
Step 8: In the same pot as the potatoes, add in the butter, milk, and pepper. Mash until well combined.
Step 9: Spread the mashed potatoes on top of the meatloaf.
Step 10: Top with bacon and cheese.
Step 11: Place it inside the oven and bake for another 15 minutes or until the cheese is bubbly, the bacon is sizzling hot, and the mashed potatoes are golden brown.
Step 12: Remove from the oven and allow it to cool at room temperature.
Step 13: Serve and enjoy!
