Talk about the perfect recipe! This dish is the best example of a full-packed meal! It has everything you wish for in a plate. Cheese, rice, meat, and veggies! Oh, man, if this isn’t the perfect meal for you, I don’t know what is. Give it a try and enjoy!
Ingredients:
2 Tbsp unsalted butter
½ c yellow onion, finely diced
1 Tbsp olive oil
2 ½ c chicken broth, low sodium
1 ¼ c white long-grain rice, uncooked
2 c cooked ham, diced
2 c broccoli florets
10.75 ounces cream of chicken soup
½ c sour cream
¾ c milk
2 c shredded cheddar cheese, separated
Salt and Pepper
Ritz Cracker Topping
1 c Ritz Crackers, crushed into crumbs
2 Tbsp butter, melted
Directions:
Step 1: Prepare the oven and preheat 175 degrees C or 350 degrees F.
Step 2: Place a saucepan on the stove and turn the heat to medium.
Step 3: Add in 2 tablespoons of butter and allow it to melt.
Step 4: Add in the chopped onions and saute’ for about 5 minutes or until translucent.
Step 5: In a pot, add 1 tablespoon of butter.
Step 6: Add in the olive oil, chicken broth, and rice. Allow it to boil, then simmer on low heat.
Step 7: Cover the pot and cook for about 7 minutes.
Step 8: Add in the broccoli and cook for another 8 minutes. Make sure not to stir.
Step 9: Remove the cover and turn the heat off. Allow the rice to stand for at least 10 minutes.
Step 10: Add in the condensed soup, sour cream, diced ham, 1 cup of Cheddar cheese, and milk. Stir until well mixed.
Step 11: Grease a 9×13-inch casserole dish.
Step 12: Transfer the mixture into the prepared casserole dish.
Step 13: Sprinkle the rest of the Cheddar cheese on top.
Step 14: Cover the casserole dish and place it inside the preheated oven. Bake for about 15 minutes or until the cheese has melted completely.
Step 15: Remove from the oven and let it sit at room temperature.
Step 16: In a mixing bowl, add in the Ritz cracker crumbs and butter. Stir until well mixed.
Step 17: Spread the mixture over the casserole.
Step 18: Put it back inside the oven and bake for another 10 minutes or until done.
Step 19: Remove from the oven and let it sit at room temperature for about 5 minutes to cool.
Step 20: Serve and enjoy!
Notes:
Do not use aged cheeses. They don’t melt and cream as easy as the Heluva Good Cheese.
